Oat Bars

Hi, my name is Kelsey.  I'm addicted to Starbucks Oat Bars. They are so simple, yet so delicious.  There may or may not have been a time this winter where I ate an oat bar almost every day.  It was a giant waste of money and I knew it.  So I quit, not quite cold turkey, but I definitely cut back.  Unfortunately, I was out doing errands on Saturday afternoon and hadn't eaten lunch.  The only thing close by (besides the movie theater and their tempting popcorn) was a Starbucks, so I had an oat bar.  Then I decided it was finally time to make my own oat bars.  Luckily, everyone and their brother has tried to recreate Starbucks' treats, from frappacinos to pumpkin scones, so it was easy to find a recipe.  This version is really simple.  I was surprised that they weren't baked at all, so don't think you're missing something below when it doesn't provide an oven temperature.  The next time I make these, I will try skipping the water as using the 1/4 cup made these bars almost sticky.

1 cups large flake oatmeal
2 cup quick cook oatmeal
1/2 tsp salt
1 tsp. cinnamon
1/3 cup butter
1/4 cup maple syrup
1/4 cup liquid honey
1/4 cup water (optional - use for tender bar, use less or none at all for stiffer bar)
1/3 cup brown sugar
1/2 teaspoon vanilla

Mix the dry ingredients together in a large mixing bowl.  I only had large flake oats, so I pulsed 2 cups in a food processor for 30 seconds before mixing with the remaining cup of large oat flakes.

In a large non-stick pan or pot, melt butter over medium heat, add the honey, syrup, vanilla, water, and brown sugar. Mix and allow to bubble gently.

Add dry ingredients to pan and mix thoroughly. Stir over medium heat for a few minutes. Do not allow to burn.

Press into an 8 x 8 inch pan that has been sprayed with non-stick cooking spray. Compress the mixture evenly using the back of a flat metal spatula.

Using a knife, score the top of the oat mixture into bar shapes to make cutting easier.

After the bars have cooled slightly, cut the bars through while still in the pan.7. Allow to cool thoroughly and enjoy!

  3. I always have to try so hard to resist the baked goods at Starbucks! I usually give in with the biscotti...its because they always leave them out right but he register, I can't me hands out of the jar! Your bars look delicioussss! I love oat bars, guess I'll have to give next time at Starbucks :) Probably this afternoon...

    1. I just made them, this is a good recipe almost like the Starbucks original. I used 1/2 the water stated and will use less the next time as they were a tad to sticky for me. I would rate 8/10 compared to the original.

  9. Yessssssss. Great and very addictive. Found I had to use the water. Also tried with slivered almonds added and 1/2 teaspoon of cinnamon + 1/2 teaspoon of garam masala. Yummy.

  11. Hey! in the middle of cooking this, you might want to add when its says all dry ingredients not to add the brown sugar! as that what i just did oops. should be fine though

  12. Wow. Not even close to Starbucks! Wayyyy too sweet, and the texture is completely wrong. As per the advice of others I skipped the water, but its still too sticky. Starbucks oat bar is dry and just on the edge of sweet. Keep looking.

  13. Sorry that you didn't like these Lori. I find that the only time the Starbucks bars are dry is when they are stale, though definitely agree that this recipe ends up on the stickier side. You could try again with less maple syrup or honey too as that would help with the stickiness and make these less sweet.

    Exactly Jenna, these are no-bake bars. Stir together, press in the pan, then cool! Enjoy. Also you may want to reduce the amount of water as you'll read in the comment thread below!

  17. I found these really good but a bit sweet. I reduced the honey and maple syrup to 1/8 cup each and used the 1/4 cup of water. Also cut the sugar in 1/2.
    My kids love them!

  18. Hi Kelsey - thanks for posting this. I really enjoyed your recipe, and on the 2nd batch I made a few changes that I humbly suggest get them a bit closer to the Starbucks version:

    -I used 2 cups of large flake oatmeal, put them in a vitamix blender (dry ingredients bowl) and made a coarse oat flour. I used 1 cup of quick oats, mixed in to the coarse flour.
    -I cut out the maple syrup, and cut back the brown sugar to 1/3 of a cup.
    -I used just a touch of water.
    -I used a flat metal spatula to press the mix into the pan after cooking. This gets the bars nice and firm.

    I also added 1.5 C of dried cranberries, and instead of fine salt I used 1 tsp of coarse sea salt to a 3rd recipe - and these were the bomb.

  20. The starbucks oat bars do not contain cinnamon. They are simply oats, vegetable oil, corn syrup, butter, yellow sugar.
